flame grilled, pan cooked pork steak with fennel and orange. that mouthful of words became a mouthful of food on thursday, march 26 (at) 10:20 am. the older older brother of the mansion (store, venue, etc) cooked this magnfifent (yes, not magnificent) steak du porc (that’s french/fancy talk for pork steak….) with dry organic wild whole fennel seeds and pieces of sicilian blood orange. needless to say it was probably one of the most subtle, tasty, sexy, and unbeknownst flavours I have ever had. the wild fennel was from an orchard in Italy that our family sent us. if any of you brkfst lovers love fennel for brkfst, and especially fennel with orange and pork, than this is your fennel. it tasted toasted before it was even cooked. the blood orange from sicily added a most sensual and undermining taste; basically what I mean here is that it made the entire brkfst come together, much like the bass guitar in a song. one cannot really hear the bass all the time, but if it wasn’t there, the song would sound empty and hollow, yet makes the song taste delicious.
